Chicken Stromboli



Hello lovely readers! Sorry, I have been MIA for a while. Things have been super busy around here. Things are likely to slow down until our events are over at work and we are settled into our new home.

In the meantime, I have a fantabulous recipe for you! This recipe uses store bought fresh pizza dough and leftover roasted chicken. It is absolutely delicious! Eaten with a salad and a glass of wine, it really does seem like a gourmet slice of Italian heaven.



You really don’t want to pass this one up! You can stuff it with pretty much whatever you want. Just make sure not to over-stuff!

This is definitely on the dinner rotation list, for sure!


  • pizza dough
  • white pizza sauce
  • roasted chicken, shredded
  • mozzarella, shredded
  • mushrooms, sauteed
  • oregano, 1/2 tsp
  • basil, 1/2 tsp
  • salt and pepper to taste

To Make:

Bring pizza dough to room temp. Preheat oven to 350. Roll out dough into a rectangle on a floured surface of corn meal. Spread a layer of white pizza sauce. Add a very thin layer of cheese. Add the mushrooms, then chicken. Top with spices. Roll it up. Place on a flat cookie sheet and spray some cooking spray on top. Bake in the oven until golden brown, around 15-20 min, depending on your oven! It really is that simple and oh so delicious!

  1. Oh my gosh, that looks absolutely delicious Whit. I haven’t seen store bought pizza dough like the one you used but I am definitely going to make this with homemade. Yum! Glad that you’ve managed to survive the busy phase and that things have calmed down a bit! x
