Chai Plum and Blueberry Coffeecake With Cinnamon Streusel And Lemon Drizzle

I love breakfast, although I don’t eat it very often. Coffeecake counts as breakfast, right? Coffeecake goes perfect with a cup of coffee, or even in this case with a nice cup of chai. Have it as breakfast, or even as dessert. Heck, serve it warm with vanilla ice cream. Yuummm. DSC_0955This recipe makes a lot, so it would make a perfect addition to a brunch. I used ripe plums and blueberries, and the addition of the chai gave it a really nice touch. Moist coffee cake with a crunchy sugary cinnamon topping with a lemon drizzle, is the perfect treat to enjoy any time of the day. Enjoy!DSC_0949

Ingredients:

  • 8 small plums, ripe
  • 2 cups blueberries, divided
  • 3/4 cup butter
  • 1 1/2 cups light brown sugar
  • 3 eggs
  • 1 cup yogurt
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla
  • 1/2 teaspoon nutmeg
  • 3 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp chai tea masala

Cinnamon Streusel

  • 1/2 cup butter, melted
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 3/4 cup flour

Lemon Drizzle

  • 1 tablespoon lemon juice
  • 1/4 cup milk
  • 1-2 cups powdered sugar

To Make:

Heat oven to 350 and grease a 9×13 baking pan. Cut the plums into half, and remove the pit. Cut into quarters.

Cream the butter with the sugar sugar. Beat in the eggs until lightened and fluffy. Beat in the vanilla, yogurt, and buttermilk.  Sift in the nutmeg, flour, salt, baking soda, baking powder. and chai tea masala.  Beat until well mixed and smooth.

Now you add half of the batter into the pan and spread it out smooth. Add half of the plums and half the blueberries, and make into a design. Pour the rest of the batter, smooth it out. Add the rest of the plums and berries.

Mix the butter, brown sugar, flour and cinnamon until crumbly and sprinkle over plums. Bake for about an hours or until a knife comes out clean. Rest the coffeecake for about 15 minutes, then add the drizzle.

Whisk the milk, lemon juice and sugar together until it is thin, but still pour-able. Drizzle over cake. Eat.
