Paneer Pasanda (Paneer Stuffed With Fruit and Nuts)

Paneer pasanda. Pasanda, meaning favorite in Hindi, is fitting for this dish. Paneer is a favorite for almost anyone. With Mughal influence, paneer is stuffed with a fruit and nut mixture, then simmered in a rich and creamy onion tomato gravy. Paneer pasanda is quite easy to make, and is sure to be pleasing to almost any palate.

Ingredients:

For Paneer

  • Paneer, cut into triangles or squares, then sliced in the middle almost to the edge
  • 2 tbsp coarse ground cashews or almonds
  • 1/4 cup raisins
  • 2 tbsp chopped cilantro
  • 1 small potato peeled and boiled, mashed
  • salt to taste
  • 1/2 tsp amchur powder
  • 3 tbsp maida made into a paste with water
  • oil for sauteing

For Gravy:

  • 1 onion diced
  • 1 cup tomato puree
  • 1 tsp shahi jeera
  • 1 inch stick cinnamon
  • 1 bay leaf
  • 2 green cardamoms
  • 2 cloves
  • 1/2 tsp turmeric
  • 8-10 cashews or almonds
  • 1 tsp ginger garlic paste
  • 1/2 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp garam masala powder
  • 1/2 tsp sugar
  • 1 small palm full of crushed kasoori methi
  • salt to taste
  • 1/3 cup cream

To Make:

Heat oil on medium. In a bowl keep the flour paste for coating paneer. Make the paste thin, but thick enough to coat paneer. In another bowl, combine nuts through amchur powder. 2013-09-21 21.41.41

Stuff into paneer, coat with flour water mixture, then saute till golden brown on all sides. 2013-09-21 21.52.13

Drain on paper towel and keep aside.

Using the same oil, add the shahi keera, cinnamon stick, bay leaf, cardamom, cloves, and nuts. 2013-09-21 20.08.27

Once the spices have started to pop, add the onions. 2013-09-21 20.10.08

 

Saute till slightly golden brown, then add turmeric and ginger garlic paste. Stir and add tomato puree along with red chili powder, coriander powder and cumin powder. 2013-09-21 20.15.24

 

Add 1/4 cup water, then simmer for 5 minutes. 2013-09-21 20.17.41Add to blender and blend till smooth.

Return to pan, add a little water to your desired consistency.Add kasoori methi along with sugar and salt. 2013-09-21 22.06.29Simmer for 10 minutes, then add cream and garam masala powder. Stir and add paneer. 2013-09-21 22.09.39

Simmer for 5 minutes. Flip paneer, then simmer another 3 minutes.

Serve with rice, naan, or chapati!
