Aloo Gobi (potato and cauliflower)


Aloo gobi is another one of those really simple yet flavorful Indian dishes. This is one of my go-to dinners, especially when I am feeling really lazy, because I usually always have the veggies on hand and I only need basic Indian spices. It doesn’t need a lot of attention, it’s hardly any work, and after half an hour a filling and delicious meal is on the table. The hardest part is peeling the potatoes. This goes great with roti and naan, and leftovers make a great toasted “sandwich”.


  • 3-4 potatoes depending on size, peeled, diced
  • 1/2 cauliflower, chopped into florets
  • 1 onion diced
  • 1/2 tsp kalonji
  • 1/2 tsp cumin seeds
  • 2 red chilis
  • 1/2 tsp turmeric
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/4 tsp garam masala powder
  • salt to tast
  • 1 tsp ginger garlic paste
  • oil for cooking
  • 2 tbsp chopped cilantro

To Make:

Heat oil in a pan, add cumin, kalonji, and red chilis. Once they splutter add onions and satue till clear. Add turmeric and ginger garlic paste. Saute till raw smell goes away. After 5-10 minutes add the spices. Stir and continue to cook covered until done, around 15 more minutes, stir occasionally. Add cilantro and stir, adjust spices as needed.
