Aloo gobi is another one of those really simple yet flavorful Indian dishes. This is one of my go-to dinners, especially when I am feeling really lazy, because I usually always have the veggies on hand and I only need basic Indian spices. It doesn’t need a lot of attention, it’s hardly any work, and after half an hour a filling and delicious meal is on the table. The hardest part is peeling the potatoes. This goes great with roti and naan, and leftovers make a great toasted “sandwich”.

Ingredients:

  • 3-4 potatoes depending on size, peeled, diced
  • 1/2 cauliflower, chopped into florets
  • 1 onion diced
  • 1/2 tsp kalonji
  • 1/2 tsp cumin seeds
  • 2 red chilis
  • 1/2 tsp turmeric
  • 1/2 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/4 tsp garam masala powder
  • salt to tast
  • 1 tsp ginger garlic paste
  • oil for cooking
  • 2 tbsp chopped cilantro

To Make:

Heat oil in a pan, add cumin, kalonji, and red chilis. Once they splutter add onions and satue till clear. Add turmeric and ginger garlic paste. Saute till raw smell goes away. Add the potatoes and stir.KnKt491MoobyhszESvYpICrBWWw7-hyyKxMTiF17BwE Add the cauliflower and stir.1f76Qyct__lhx2AA-nqwiJGU2c8-qZBTLGOyooz74JU Cover and reduce heat. After 5-10 minutes add the spices. Stir and continue to cook covered until done, around 15 more minutes, stir occasionally. Add cilantro and stir, adjust spices as needed. 1. Yum! Another gorgeous dish Whitney! Hm, I think I have everything in the cupboard except ‘kalonji’. What is it? By the way, I made goat curry tonight. Thought of you! xx
