Stuffed Besan Chilla Pie (chickpea potato pie)

Hope everyone had a lovely 4th, and maybe you are having today off of work like I am! I figured I would use this free time to post another recipe. Sometimes I like to experiment. At times they come out great, and at times they come out like crap. This is one of the times experimenting did not come out like crap. I like besan chillas, which are pretty much a savory type of Indian pancake that uses chickpea flour. I guess you can call them a vegan omelette also. I wanted to do something more, so I decided to see how a stuffed besan chilla would come out. I used Indian mashed potatoes as the filling, and topped it with beaten yogurt, coriander, and onions. Surprisingly, it came out really well.

This can be made completely vegan if you use oil. Also, I think it makes for a perfect brunch. All you need is a good size cast iron or oven proof skillet.

For pie base

  • 1/2 cup besan flour
  • salt to taste
  • 1/4 tsp turmeric
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp red chili powder, or more if you prefer
  • 1 green chili diced
  • 1/4 of a tomato diced
  • 1/2 tsp ginger garlic paste
  • 2 tbsp chopped coriander leaves
  • water for thinning

For mashed potatoes

  • 4 large potatoes, peeled, boiled, mashed
  • 1 onion, sliced
  • 1 sprig curry leaves
  • a dash of hing
  • 2 red chilis
  • 1/2 tsp mustard seeds
  • 6-8 fenugreek seeds
  • salt and pepper to taste
  • extra butter if wanted

To Make:

In a bowl, add all ingredients and slowly add in water while stirring until you have the consistency of a pancake batter. DQqCl5YJm4SnayjKQ-Ys5AXmCawQ-_HHzZutNjmIhWY

Let cook till it is dry to the touch. The picture below is what it looks like when it is almost dry.

Pour the rest of the besan mixture over the potatoes. I added a little cheese. You can leave that out.

Let it cook on the skillet for about 5 minutes, until the top layer starts to get a little dry. Put in oven for around 30 minutes, or until a toothpick inserted comes out clean. If you take it out too early, the besan will not be cooked completely.

Looks kinda cool huh? Top with some beaten yogurt, cilantro, and onions. Maybe some coriander chutney if you like. oj6z3K7mkSWYsAQoVgKsqfBStVgCxpXt_vplvVYA6ig

  1. Wow… Yummy,…, have to try this.. Don’t I love experiments:)). Loved the idea. I love besan chollas and make them stuffed with different stuffings but I like this avatar :).

  2. This looks amazing Whitney! I’ve never tried besan but I absolutely adore all of the ingredients that you’ve put in this stuffed pancake. I’d happily devour a wedge or two for breakfast… or lunch, or dinner. Yum! Glad that you enjoyed your baking day. Happy late 4th to you beautiful! xx
