Aloo Patta Gobhi: Potatoes and Cabbage

The thing I love about Indian food, is that many dishes are so uncomplicated, yet so full of flavor. This particular dish, aloo pata gobhi, is one of those dishes. I also love that when it comes to making Indian food, you can tweak any recipe to suit your tastes, and you can quite often experiment with flavors. If you have a particular spice that you love, don’t be afraid to use it. For me, I love kalonji (onion seeds), and use them quite often. I have used kalonji in this recipe, but you can leave it out if you like. The hardest part about this dish is chopping the vegetables. So if you are looking for a very low maintenance recipe, do try this! This is a dry dish, so it especially goes well with chapati or naan.

Ingredients:

  • 1/4 cabbage, chopped
  • 2 potatoes, peeled and diced
  • 2 red chilis
  • 1 tbsp ginger garlic paste
  • 1/2 tsp kalonji
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2  tsp cumin powder
  • 1/2 tsp garam masala powder
  • 2 tbsp chopped cilantro
  • 2 tbsp oil
  • salt to taste

To Make:

Heat oil in a pan. Add kalonji and cumin seeds and red chilis. Once they splutter add the onions. Saute till transluscent and add the turmeric and ginger garlic paste. Saute till raw smell goes away. Add potatoes and cabbage. Saute till potatoes are almost done. Add all of the spices and stir a few times. Cook till potatoes are done, stirring occasionally. That’s it!
