I’ve been on an avocado kick lately, mostly because I have been able to score some really good deals the last few weeks. I’ve made guacamole twice, and some baked avocado fries (coming soon). I am thinking about possibly using some in a popsicle recipe, but I might just use the rest for a skin or hair cream.
In the meantime, here is a recipe for a super simple guacamole recipe that can be spread on a sandwich or just used as a dip with tortillas or veggies.
- 1-2 semi-soft avocados
- diced tomatoes, to taste
- diced red onions, to taste
- salt and pepper to taste
- 1 tbsp lemon juice
- 1 green chili, finely diced
Using a knife, cut around the avocado seed and twist open. Scoop out the flesh. Combine all ingredients in a bowl, and fold. If you like it chunky, just gently fold. If you like it mushy, run it through a blender.
