Easy Baba Ghanoush

Who doesn’t love baba ghanoush? It is super simple to make, delicious, and can be quite nutritious when made at home. I love to eat it at restaurants, but I love making it at home because I can control what I put in it. This recipe is low on oil, and low on tahini, but full of flavor. It makes for an easy appetizer, or party dip. Serve with warm pita, or even vegetables.

Ingredients:

  • 1 eggplant
  • salt, to taste
  • the juice of one lemon
  • 1 tbsp minced garlic
  • 1-2 tsp tahini
  • 1/8-1/4 cup olive oil

To Make:

Heat the oven to 500. Rub oil all over the eggplant, then put on a cookie sheet and bake in the oven for around 15-20 minutes, or until the skin separates from the flesh. Let it cool, then peel off the skin. In a blender, add all the ingredients and blend till smooth. Serve as is, or you can do like I did and top with chili flakes and chili sauce. Even sriracha would be great!IMG_20130407_205604
