Easy Mock Tandoori Chicken Pockets

We went to a party last night in celebration of a friend passing his dissertation proposal, and also it was his birthday. I wanted to bring something, so I made cupcakes, pakodas, and these chicken appetizers. I had some wonton wrappers in the fridge just waiting to be used, so I put my thinking cap on and this was the end result. They ended up quite nice, and they were all eaten. Go me.

  • 1 store bought roasted chicken, skin removed and chopped
  • half of a red onion, diced
  • 1 tbsp cilantro leaves, chopped
  • 3 tbsp chicken tandoori masala
  • half of a lemon
  • wonton wrappers
  • 1/2 tsp red chili powder
  • 1/8 tsp garam masala
  • 1/2 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1 tbsp oil

To Make:

Heat a pan with oil and once hot add the chicken along with all of the spices. Stir and cook for about 5 minutes. Remove from heat and let cool. Squeeze the lemon and add the onions and cilantro and stir.

Preheat oven to 425. Wet the sides of the wonton wrappers and fill wit chicken, then fold over to make a pocket. Make sure sides are sealed. Spray with cooking spray and heat in oven for 8-10 minutes.

*In lieu of cooking spray, you can use egg wash.
