Apparently it is popover season. I’ve been seeing lots of people make them, so I decided to make some popovers with a twist. Popovers with paneer tikka! They turned out surprisingly well, and were quite tasty served with spicy butter. Enjoy!
*Do not, I repeat do not open the oven while baking
- 4 eggs, room temperature
- 1.5 cups whole milk, lukewarm
- 1/2 tsp salt
- 3 tbsp butter, melted
- 1.2 cups all purpose flour
- paneer tikka, 6 cubes
Ingredients for Spicy Butter:
- 2 tbsp butter, soft
- pinch of kosher salt
- 1/2 tsp red chili powder
- a gentle squeeze of lime juice
Preheat oven to 450* and grease a muffin tin. In the bottom of the tin, add paneer. Make sure the oven is all the way heated before starting the popover batter.
In a small bowl whisk all ingredients together except for butter and flour. Mix really well, until frothy. Add flour and mix well until no lumps. Stir in butter and mix well. Pour into tins, 3/4 way full.
Put into oven for 20 minutes, then turn down to 350 for another 10 minutes. Serve hot with spicy butter.
