Veggie Puff, an Indian savory puff pastry

These things are scrumptious! And so easy to make! The hardest part is waiting for them to bake in the oven, because the smell that fills the house is so tempting! Here is how to make.

Ingredients:

  • potato, 1 peeled and chopped
  • carrots, 2, chopped
  • cauliflower, 1/2 head, chopped
  • onions, 1/2 chopped
  • cumin seeds, 1/2 tsp
  • coriander seeds, 1/2 tsp crushed (not ground)
  • ginger garlic paste, 1 tsp
  • turmeric, 1/2 tsp
  • amchur powder, 1/2 tsp
  • pav bhaji masala (optional), 1 tsp
  • coriander powder, 1/2 tsp
  • cumin powder, 1/2 tsp
  • red chili powder, 1/4 tsp
  • oil, 2 tbsp
  • coriander leaves, 1 tbsp
  • salt, to taste
  • puff pastry sheets, these are the kind I used
  • 1 egg yolk, beaten

To Make:

Boil all vegetables till soft. In a pan, add the oil and once hot add cumin seeds and coriander seeds. Once those splutter add onions and cook till translucent. Add ginger garlic paste, turmeric and red chili powder. Stir until raw smell goes away. Add vegetables along with the rest of the spices, stir and cook for another few minutes. Let cool.

Follow directions to thaw pastry sheets. Cut into whatever shape you want, I just cut them into rectangular pieces. Add a spoonful, or however much it takes, (I used two) and add to one side of the pastry. Fold the other side over and close. You can use a fork and make a design around the edges. Brush egg yolk over the pastries. Cook in oven on nonstick pan, 350* till golden brown. In my oven it took about 20-25 minutes.
